How is Halwa Chamia made ?

Papillon is a well-known candy that is much appreciated by youth as well as by adults.
Called Halwa Chamia in Tunisia, Halwa or else Halva in other countries. Papillon is made out of a mixture of tahina and nougat.
Tahina is made out of sesame seeds selected in countries such as Sudan, India, China…
Once in our factory, the sesame seeds are carefully controlled and stocked. In the first production stage, the sesame seeds are cleaned through a process of washing and elimination of impurities: these seeds are then shelled so that only the pulp is left.
In the next stage, they are dried and sieved to remove any remaining impurity. After roasting and cleaning them a second time, the sesame seeds are ground in three stages to obtain thus the Tahina, a sort of fluid dough of a great finesse and with a very weak granulometry ensuring the specificity and high quality of Papillion Halwa Chamia.
As to the nougat, it is the fruit obtained after cooking a mixture of sweetened water and Glucose at a 140° c temperature. This cooking is followed by intensive beating in order to obtain a white and creamy mousse.
Tahina and Nougat are finally blended at low speed to finally obtain Papillon Halwa Chamia.
