How are sweets made ?
Candy-making follows 5 stages :
- Dissolving/Cooking, consisting of pressurized cooking of
a sugar solution/glucose syrup.
- Harmonization/kneading: the sugar mass is then kneaded to
give our plasticity and homogeneity; it is at this stage that
some ingredients such as flavours are added.
- Stamping whose objective is to obtain pieces with well-defined
shape, weight and size.
- Cooling down: stamped pieces have to go over cooling bands.
- Wrapping up.
